Warm Gorgonzola Sauce

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup whipping cream
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 1 cup crumbled gorgonzola (4 ounces)

Directions

  • 1 In a small heavy saucepan melt butter.
  • 2 Add in flour and whisk 1 minute.
  • 3 Gradually whisk in cream, wine and chicken broth; boil until the mixture is thick enough to coat the spoon (about 1 minute).
  • 4 Add in crumbled Gorgonzola and stir/whisk until the cheese is melted and smooth and the sauce is reduced to desired consistency (about 5-6 minutes).
