Spaghetti Squash Saute

Ingredients

  • 1 -2 lb spaghetti squash (approximately)
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped green onion
  • 2 garlic cloves, minced
  • 1/2 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 cup grated parmesan cheese

Directions

  • 1 Place whole spaghetti squash in baking dish.
  • 2 Prick all over with fork.
  • 3 Bake at 350 degrees for 45 to 60 minutes or until tender; cool.
  • 4 Cut squash in half lengthwise; remove seeds.
  • 5 With fork, scoop out flesh into medium bowl, separating into spaghetti-like strands.
  • 6 In large skillet, heat oil over medium-high heat.
  • 7 Cook green onions and garlic in oil about 3 minutes, stirring constantly.
  • 8 Add squash and stir-fry 3 to 5 minutes more until heated through.
  • 9 Stir in parsley and lemon juice; mix well.
  • 10 Add cheese and toss to coat.
