Southern Buttermilk Cornbread

Ingredients

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 1/2 cups fat-free buttermilk
  • 2 tablespoons canola oil
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup egg substitute

Directions

  • 1 Heat oven to 450 degrees.
  • 2 Grease a 10-inch cast iron skillet.
  • 3 Mix all ingredients. Beat vigorously 30 seconds.
  • 4 Pour batter into pan.
  • 5 Bake about 20 minutes, until golden brown.
  • 6 Serve warm.
