Roti De Pore a La Boulangere

Ingredients

  • 2 garlic cloves
  • 1 teaspoon salt
  • 1 (6 lb) pork loin roast (bone in or out)
  • 4 lbs potatoes
  • 1 large onion
  • 3 tablespoons butter, melted
  • 2 teaspoons seasoning salt
  • 1/8 teaspoon pepper
  • 2 tablespoons fresh parsley leaves or 2 teaspoons dry fresh parsley leaves

Directions

  • 1 Preheat oven to 425 degrees.
  • 2 With garlic, crush one clove and mix with the salt. Rub mixture over pork; place fat side up in a large roasting pan. Roast 30 minutes.
  • 3 Meanwhile, thinly slice potatoes and coarsely chop onion. Crush other garlic clove; toss with potatoes, onion, butter, seasoned salt, and pepper.
  • 4 After pork has roasted 30 minutes, spoon potatoes around meat. Roast one hour and 15 minutes longer, stirring potatoes around twice, until temperature on a meat thermometer reaches 150 degrees.
  • 5 Let stand before carving and garnish with parsley.
