Prawn (Shrimp) Cocktail

Ingredients

  • 16 medium prawns, shelled, deveined and cooked (shrimp)
  • 1/2 cup low-fat mayonnaise
  • 1/4 cup tomato sauce (ketchup)
  • 1/4 teaspoon ground black pepper
  • 3 drops Tabasco sauce
  • 4 small lettuce leaves
  • 4 cherry tomatoes, cut into quarters
  • 4 teaspoons corn kernels

Directions

  • 1 In a small bowl combine mayonnaise, tomato sauce and pepper and mix well.
  • 2 Add a few drops of tabasco sauce, stir and taste, adding more tabasco to taste.
  • 3 Add prawns to the bowl and blend through lightly.
  • 4 Place lettuce leaves in bottom of 4 martini glasses and top with prawn mixture (4 prawns per serve).
  • 5 Garnish with cherry tomatoes and corn kernels.
  • 6 Serve chilled.
