Pierogi Pasta Shells

Ingredients

  • 25 uncooked jumbo pasta shells
  • 1 (32 ounce) package refrigerated mashed potatoes
  • 1 tablespoon dried onion flakes
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup green onion, chopped

Directions

  • 1 Cook pasta shells according to package directions.
  • 2 Drain and rinse in cold water.
  • 3 Place mashed potatoes in a large microwave-safe bowl.
  • 4 Cover and microwave on high for 2-4 minutes, stirring once.
  • 5 Add the minced onion, onion powder and garlic powder.
  • 6 Stir in 1 cup of the cheese until blended.
  • 7 Stuff into shells.
  • 8 Place in ungreased 13-inch by 9-inch by 2-inch baking dish.
  • 9 Sprinkle with green onions and remaining cheese.
  • 10 Cover and bake at 350 degrees for 20 minutes.
  • 11 Uncover; bake 10 minutes longer or until heated through.
