Perfect Cornbread Sticks

Time: 30 mins

Ingredients

  • 1 cup sifted unbleached all-purpose flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup stone-ground yellow cornmeal
  • 2 eggs
  • 1 cup milk
  • 1/4 cup butter (soft)

Directions

  • 1 Preheat oven to 425F and place corn stick pans in oven.
  • 2 Sift flour, sugar, baking powder, and salt into bowl.
  • 3 Stir in corn meal.
  • 4 Add eggs, milk, and butter.
  • 5 Beat with electric hand mixer until just smooth, about one minute, do not over beat.
  • 6 Grease pans with solid shortening.
  • 7 Fill pans about 2/3 full.
  • 8 Bake in hot oven (425 degrees) 12 to 15 minutes.
