Pawtucket Chicken Chowder

Time: 1 hrs

Ingredients

  • 4 tablespoons oil
  • 1 onion, chopped
  • 2 -3 celery ribs, peeled and diced
  • 2 -3 potatoes, peeled and diced
  • 2 tablespoons parsley
  • 2 teaspoons fresh savory or 1 teaspoon dried savory
  • 2 tablespoons flour
  • 1 cup milk
  • 2 cups chicken broth
  • 2 cups chicken, cooked
  • 1 cup corn
  • salt and pepper

Directions

  • 1 Heat oil and stir in the onion and celery cooking for 5 minutes Add potatoes, cover and cook on low for 10 minutes.
  • 2 Stir in the herbs.
  • 3 Mix flour with milk to make a thin paste.
  • 4 Add the milk and the chicken broth to pot and bring to a boil.
  • 5 Simmer until the vegies are done but mushy.
  • 6 Stir in the chicken and corn, add salt and pepper.
  • 7 Cook gently 5 minutes.
