Lemon Glazed Carrots

Ingredients

  • 1/2 lb baby carrots (one package)
  • 2 tablespoons butter
  • 1 pinch pepper
  • 1/4 cup light brown sugar
  • 1 teaspoon lemon zest (yellow part of rind)

Directions

  • 1 Steam or boil carrots 35-45 minutes.
  • 2 Melt butter and mix in pepper, sugar and lemon zest.
  • 3 Keep warm and stir 3-5 minutes or until sugar dissolves.
  • 4 Pour over carrots and serve.
