Incredibly Easy Lemon Curd, Ecuadorean Style.

Ingredients

  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 1/4 cup lemon juice, fresh
  • 3 egg yolks
  • 1/4 cup cornstarch
  • 1 cup water
  • 1 lemon, zest of
  • 1 tablespoon unsalted butter

Directions

  • 1 Mix the cornstarch in the water.
  • 2 Put all ingredients into the blender and blend until smooth.
  • 3 Pour from the blender into a saucepan and cook over low heat until it thickens.
  • 4 Done!
