Fancy Green Beans

Ingredients

  • 2 tablespoons teriyaki sauce
  • 1 tablespoon honey
  • 1 tablespoon butter (melted)
  • 1 tablespoon fresh lemon juice
  • 1 1/2 lbs fresh green beans, preferably thin ones, trimmed
  • 2 slices bacon
  • 1/4 cup yellow pepper, cut into strips (about 1/4 of a pepper)
  • 1/4 cup red pepper, cut into strips (about 1/4 of a pepper)
  • 1/2 cup thin sliced onion
  • 2 garlic cloves
  • 1/2 cup whole cashews
  • 1 tablespoon fresh lemon juice

Directions

  • 1 Teriyaki-Honey Sauce:.
  • 2 In a small bowl, stir together the teriyaki suace, honey and melted butter.
  • 3 Bring a large pot of water to a boil.
  • 4 Drop in the beans and cook for 4-5 minutes, or until the beans are bright green.
  • 5 Drain the beans in a colander, then plunge them into ice water.
  • 6 Drain again and set aside.
  • 7 In a skillet, cook the bacon until very crisp.
  • 8 Crumble and set aside.
  • 9 Saute the peppers, onion and garlic in the hot bacon fat for 2-3 minutes.
  • 10 Add the beans, cashews and bacon to the skillet and heat through.
  • 11 Add the teriyaki-honey sauce and toss gently.
  • 12 Add the lemon juice and toss again.
  • 13 Enjoy.
