Crock Pot Curry Split Pea Soup

Time: 10 hrs 20 mins

Ingredients

  • 16 ounces dried split peas, rinsed, drained and picked over
  • 1 medium onion, chopped
  • 6 cups boiling water
  • 2 1/2 tablespoons curry powder
  • 6 carrots, peeled and chopped
  • 2 celery ribs, chopped
  • 1/4 teaspoon seasoning salt (to taste)
  • 1/4 teaspoon fresh ground pepper (to taste)
  • 2 cups Canadian bacon, chopped

Directions

  • 1 Place all ingredients except 1/2 Tbls. of the curry powder in a crock pot.
  • 2 Cover and cook on low setting for 10 to 11 hours.
  • 3 Stir in the remaining 1/2 Tbls. curry powder.
  • 4 Add more seasoned salt and pepper to taste, if needed.
  • 5 Garnish with chopped chives and croutons.
