Sweet Crunchy Mustard Chicken

Ingredients

  • 3 tablespoons fine dry breadcrumbs
  • 2 teaspoons light brown sugar
  • 1 teaspoon dried tarragon or 1 teaspoon dried basil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 2 tablespoons Dijon mustard
  • 4 chicken breast halves, with skin-on bone-in
  • lemon wedge, for serving

Directions

  • 1 Preheat the oven to 500 degrees.
  • 2 In a small bowl, mix the bread crumbs, light brown sugar, tarragon or basil, kosher salt, and pepper.
  • 3 Spread the mustard all over the chicken breast and sprinkle with the crumb mixture.
  • 4 Set the breasts, skin side up, in a 9 x 13-inch glass or ceramic baking dish and roast in the upper third of the oven for about 25 minutes, or until they are cooked through and crisp.
  • 5 Serve the chicken breasts hot, with lemon wedges.
