Smashed Pinto Beans

Ingredients

  • 1 medium onion, chopped
  • 1 teaspoon olive oil
  • 2 garlic cloves, minced
  • 1/2 cup tomato sauce
  • 2 (15 ounce) cans pinto beans, rinced and drained
  • 1 cup beef broth
  • 1 tablespoon hot sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon pepper
  • 1 -2 tablespoon red wine vinegar

Directions

  • 1 saute chopped onion in hot olive oil in a pan over medium high heat for 5 minutes, or until onion is tender.
  • 2 Add minced garlic, and saute for 1 minute.
  • 3 Stir in tomato sauce and remaining ingredients.
  • 4 Bring to a boil, reduce heat, and simmer for 8 minutes.
  • 5 Mash bean mixture with a potato mashed until thickened, leaving some of the beans whole.
