Microwaved Bacon and Eggs for One

Time: 10 mins

Ingredients

  • 2 teaspoons butter
  • 1/4 cup thinly sliced onion
  • 2 eggs
  • 1 tablespoon sour cream
  • 2 slices bacon, cooked crisp and cut into pieces (or bacon bits)

Directions

  • 1 Combine butter and onion in small microwave-safe dish and cook on high for three minutes or until onion is soft and then stir it to make it sure it is combined.
  • 2 Beat eggs with sour cream in a small cup or bowl and then pour over onion.
  • 3 Cook on high about 1 1/2 minutes, stirring several times.
  • 4 Sprinkle bacon along rim of dish and cook on high for 30 seconds.
