Filet Mignon With Blue Cheese

Ingredients

  • 1 tablespoon butter
  • 2 (6 ounce) beef steaks, 1 inch thick
  • 2/3 cup beef broth
  • 1/4 cup brandy
  • 1/2 teaspoon rosemary
  • 1/2 cup blue cheese, crumbled (about 2 oz)
  • salt and pepper

Directions

  • 1 Melt butter in heavy medium skillet over medium-high heat.
  • 2 Season steaks with salt and pepper.
  • 3 Add steaks to skillet and saute until cooked to desired doneness, about 4 minutes per side for medium-rare.
  • 4 Transfer steaks to plate.
  • 5 Add broth, brandy and rosemary to skillet and boil until sauce is reduced 1/3 cup, scraping up browned bits, cooking for about 5 minutes Spoon sauce over steaks.
  • 6 Top each steak with half of blue cheese.
  • 7 Serve.
